Valérie & Benoît Lahaye

 |
Every wine
produced by Benoît Lahaye should be bought without
hesitation, a truly stunning range.
— Champagne Discovery
With the growing worldwide demand for
these wines they can sometimes be a little difficult
to find, but they are well worth the search, as
Lahaye is rapidly becoming one of the top
grower-producers in the Montagne de Reims.
— Peter Liem
I admit to be in deep love with his
wine… This is doubtlessly one of the finest
producers in Bouzy, and readers shouldn’t miss the
chance to try any one of his cuvées.

The emphatic exuberance and sheer class of
Bouzy’s grand cru is embodied in no finer form
than Benoît Lahaye’s stunning champagnes.
|
Lahaye creates vibrant, complex champagnes, combining
the ripe depth typical of the southern Montagne de Reims
with an energetic expressiveness derived from high-quality
viticulture. Remarkably polished and undeniably delicious,
his cuvées are never austere despite their soil-driven
purity and low level of dosage. At the same time he’s so
thoughtful and skilled in the art of blending that even
when he combines two varieties or vineyards, the resulting
champagnes offer more generous terroir expression than can
be found in many single-vineyard champagnes.
Benoît cares deeply about philosophy but considers
results to be just as important as his methods. There are
things he does not compromise on, and viticulture is one
such example. A passionate advocate of natural
winegrowing, he has bottled estate Champagnes since 1996.
He subsequently started working organically and in 2007
his domaine received organic certification. He also uses
various biodynamic treatments: using only his own compost
with some organic manure as a complement, he applies
various herb infusions to the vineyards — an almost
homeopathic ethos.
Lahaye is one of the few growers in Champagne to own a
horse, which he uses to plough much of his 4.5-hectare
estate. The land is worked thanks to Tamise, an Auxois
working-horse, as well as two friendly donkeys who are on
hand for a bit of additional support.

Benoît’s vineyards are situated in the Grand Cru
villages of Bouzy and Ambonnay as well as the Premier Cru
village of Tauxières. The plots are 90% Pinot Noir, and
the average age of the vines is 35-40 years. He also has a
tiny plot of Chardonnay on the Côte des Blancs, in the
premier cru village of Vertus.
As with all quality-conscious producers, Lahaye presses
the grapes from each of his parcels separately.
Vinification is mostly in oak fûts de chêne while
the remainder is in temperature-regulated stainless steel
tanks. Only indigenous yeasts are used, and there is no
chaptalisation other than in exceptional circumstances.
Vinification lasts for 10 months, during which the wine is
left on the lees without racking. Malolactic fermentation
is sometimes allowed depending on the cuvée, and there is
no fining or filtration. Dosage is minimal, if at all
used.
Despite his choice of techniques, Lahaye’s champagnes are
neither oxidative nor overtly oaky in flavour. In fact,
they consistently take time to develop, typically needing
ageing or plenty of air upon opening to show their best,
yet they’re capable of tremendous complexity and
intensity.
 |
A very serious
young wine grower, Benoît Lahaye practises a
thoughtful biodynamic viticulture of the very
highest standard. These are Champagnes with a real
taste of their origins.
— Michael Edwards, “The
Finest Wines Of Champagne”
Lahaye’s wines are intense without being weighty,
showing a vinous, concentrated character that
clearly announces an emphasis on quality work in the
vineyards. They’re always made from very ripe fruit,
yet as with many naturally-grown wines, the dominant
character is not one of fruit, but of terroir.
— Peter Liem |

Blanc de Noirs
Extra Brut |
S$ 100
/ 750 ml for 3-bottles or more
S$ 105 / 750 ml
|
100% Pinot Noir from
Bouzy — “Les Vaux Bétins” and “Les
Hannepés” plots with deep soils —
and Tauxières, in an area called
“Les Argentières”, with more chalk.
Vines were planted in 1960, 1980 and
1990. The grapes from each parcel
are pressed separately. No
filtration. Dosage is < 5
gr/liter (extra-brut). About 600
cases produced.
|
“Mature, expansive nose which soars with
spiced apples and tangerine. Very classy, in
fact, very Bouzy. Leesy and meaty in the
attack, with broad shoulders, structure,
depth and power, and notes of apricot and
orange. Such stony minerality here, and
quite electric in its energy profile.
Finishes long and incisive with a
captivating chalky and saline after-taste.
Super salivating.” AC

Rosé de Macération
Grand Cru |
S$ 105
/ 750 ml
|
100% Pinot Noir from
“Les Juliennes”, a vineyard planted
in 1973 and located in Bouzy, on the
border with Tauxières. Shallow,
brown chalk soils. Whole-cluster
maceration for 2 to 3 days, then
direct pressing. The still wine is
racked once and not filtered before
its secondary fermentation. The wine
was aged 50% in amphora and 50% in
300-litre barrels. Low dosage of 2
to 3 grams/liter (extra brut).
|
“Always a sleeper hit chez Lahaye, proven by
how quickly it disappears from our shelves.
This vinous rosé is very pinot in character
and this year it's more ample, mature and
succulent. Typical fragrant strawberries and
raspberries with a hint of rose and sweet
tea feature on the nose, followed by a
plush, broad and incredibly sustained
finish. This will be so versatile with food,
and perfect for the moment when you need a
gourmand pinot that also truly refreshes.
Charming.” AC |

Barrel-fermented and aged for 10
months, followed by 5 years on
lees. Dosage 3 g/l (extra-brut).
|
“Wow, check out the heights the nose brings:
crisp red fruit, fragrant herbs, a whiff of
sea breeze. In the mouth it shows a tense,
vinous depth of red berry fruits, all silky
with an extraordinary breadth and depth.
Bracing, incredibly pitched and energised,
it is a classy wine combining power and
refinement. A reference-class Bouzy grand
cru.” AC |

Blanc de Blancs
Extra Brut |
S$ 160
/ 750 ml
|
100% Chardonnay
from a small holding in the
village of Voipreux (between Le
Mesnil-sur-Oger and Vertus) in the
Côte des Blancs. A blend of
roughly equal parts of 2015 and
2014. Vines are 60+ years old and
have been ploughed by horse since
2010. Bottled without filtration.
No SO2 added. Zero dosage.
|
“If you want to know what minerals smell
like, try this. Stones, chalk, and iodine
mingle with citrus fruits on the nose. The
palate is dense and ripe, juicy yet slender,
with flavours that extend effortlessly
toward an elongating finish speckled with
sea salt and lime peel. High-revving energy
levels here, and the archetype of Champagne
that's so pure that it almost hurts.
Vigorous but also endlessly classy.” AC

Violaine Brut
Nature (2015)

S$ 160
/ 750 ml
|
50% Pinot Noir and
50% Chardonnay, from vines planted
in 1989 and 1990 – 50% from “Les
Argentières” (Tauxières) and 50%
from “Les Monts des Tours”
(Bouzy). The grapes are pressed
separately for the two parcels.
Fermented and aged in oak. Bottled
without filtration. No SO2 added.
Zero dosage.

“Crystalline purity that can be vividly
picked up even from the nose alone. This is
so tonic, expressive with highly pitched
notes of citrus rind, pear, lemon oil, and
exotic fruits. There’s an incredible energy
on the palate that stimulates the salivary
gland, finishing with a chalky dry extract.
Pure class and grace, and clearly one of the
most exemplary no-SO2-added Champagnes
around. Simply masterful.” AC

80% Pinot Noir,
20% Chardonnay. All grand cru
fruits, entirely from Bouzy –

planted in 1966. Barrel-fermented
and aged for 10 months, followed

“An added maturity and softness due to the
extra aging on lees can be sensed right
away. A very complex nose: citrus sorbet, a
little smoke and meat, and a touch of fresh
cream and basil. Extraordinarily silky in
texture, supported by depths of flavours
which billow to a delightful crescendo of
redcurrant-tangerine-red apples melange.
Voluminous, extremely fine and round in the
mouth, finishing with a repeating perfume in
the back of the mouth. Extraordinary
indeed.” AC

Le Jardin de la Grosse
Pierre Brut Nature Grand Cru (2015)
|
S$ 181
/ 750 ml
|
100% from Bouzy
Grand Cru. A
single-vineyard champagne made
from a field blend of old vines.
The oldest vines were planted
in 1923 by Benoît’s great
grandfather, at a time when
vineyards were inexpensive. (The
vines in Champagne usually average
30 years old and it's rare to have
vines that are almost a century
old.) The grape
varieties include Pinot Noir,
Pinot Meunier, Pinot Blanc,
Chardonnay, Arbanne, Chasselas,
Petit Meslier, Gros Plant, and
Teinturier, amongst others. Bottled
without filtration, then kept an
extra 28 months in bottles before
release. Zero dosage. About 1,500
bottles made.
|
“You never know what to expect from this
cuvée year after year. The only thing that's
constant is that it always surprises you. A
singular exotic specimen. Due to the age of
the vines, as well as the multitude of
varieties, this wine has a tremendous
complexity and unique aromas. It always
starts out quite taut, needing plenty of
oxygen. When it reveals itself, it may be
quite startling – complex, distinct and
richly fragrant with savoury-sweet notes of
peach, white plums, green tea and wild
herbs. This rendition feels more burnished,
further accentuating the cuvée's umami
undertones. The depth is almost bottomless
and the wine is a chameleon in the glass,
ever-changing with every minute.
Bewildering. Beguiling. Bedazzling.” AC
