he started bottling his own wines, and in a very
short period of time, he has turned into a rock and
roll star of the Jura. Wines of strong personality,

Jura is currently the hottest wine region
in France, thanks to enamored sommeliers and other
ardent fans it has inspired in recent years. The
region has created wine heroes, icons and cult
names on the indie wine scene and the natural wine
circuit. Without a doubt, one of the most
recognisable labels is that of Philippe Bornard.
|
The wines from Jura are unusual,
distinctive, and completely different from wines made
anywhere else in the world. This pastoral region is home
to a profusion of old vineyards — there was never enough
money to pull up the old vines and plant younger, more
productive clones — and in this region of old vines, the
Bornard family have been guardians of their precious
plots for generations.
Philippe Bornard lives in the celebrated village
of Pupillin near Arbois. The family had previously only
sold their grapes to co-ops but when his father retired,
Phillipe managed to gain control of the vineyards and
began bottling under his own name. In fact, it was
Pierre Overnoy, no less, who had persuaded Philippe to
begin making his own wine. Now, decades later, the
domaine works with nearly seven hectares of 30+ year old
vines and farms exclusively biodynamically, for which
they became fully certified in 2012.
The domaine's iconic fox label is a must on the shelves
of any self-respecting natural wine bar or wine
merchant, and amongst our team we had tasted multiple
Bornard bottles at various wine bars across the globe,
from London to Tokyo to Los Angeles. With the wines
being so highly sought after, we thought it would be a
long — but absolutely worthwhile — shot to arrange a
visit with the hope that we could bring these stellar
wines onto our shores. Two years ago, our first visit
finally took place.
Phillipe Bornard is a larger-than-life character:
gregarious, intense and mischievous. He is practically
retired now, with 2017 being his last vintage before passing
the domaine down to his son, Tony Bornard. Speaking in rapid
and furious French, he admitted that while he may miss
making wines, it’s time for him to enjoy life now that he
feels secure that his son can comfortably take over.

Bornard’s vineyard holdings lie in two appellations: Côtes
du Jura and Arbois Pupillin. The grapes are grown at high
altitude — mainly in the Pupillin bowl — on limestone and
clay soils, which allow for a long slow ripening. Typically,
the wines start out with a long, slow maceration in
fibreglass, and then move to large older oak barrels and
foudres for maturation.
In the spirit of organic cultivation and non-interventionist
winemaking, Bornard crafts vibrant, light-footed unsulphured
reds; sumptuous, aromatic whites; and also the intriguing Vin
Jaune — a collection that constantly counts amongst
the region’s most memorable wines. What is not known to many
is that he is a master of sparkling wines too, as fans of
his limited release pét-nats will readily attest.
The
young Tony Bornard (right) has been working
with his father at the domaine for the past few years after
having spent a few seasons working in vineyards in New
Zealand. Tony himself has secured 2.5 additional hectares in
some of the most iconic spots in the Jura, namely around the
huge “Pupillin” sign in the centre of the Arbois-Pupillin
appellation. He currently makes three cuvées under his own
name: a Chardonnay, a Pinot and a Ploussard. One taste of
his wine was all that we needed to know that the future of
this domaine is secure and bright.
After tasting their magnificent wines at their home, we went
for lunch and continued tasting bottles while humbly
imploring them to allow us to import the domaine's wines
into Singapore. And while they were non-committal on that
sunny summer afternoon, perhaps we were somewhat agreeable
people as, a few months after returning home, we received
the good news we had been hoping for.

Today, we are thrilled to offer our sophomore
allocation from this venerable domaine. There are
more cuvées in this collection, including the
pét-nats and rarities in magnum format. Quantities
are rather limited, so don’t miss these inimitable,
delicious iconic wines. |

Gaudrettes is always a stand-out at
our tastings at the Bornard cellar and 2018
is no exception. This first release was aged
entirely in tank, which is a first for this
wine. In the past it has always only been
aged in wood (as the remaining two releases
will be). It is fresh-tasting Chardonnay but
still has complexity and a beautiful
mouth-feel. It exhibits the same
characteristics as his other wines on the
finish – long and lingering. The different
varieties of marl that are found in the Les
Gaudrettes vineyard provide a complex
minerality to wines made from grapes grown

Bornard may be released in several
stages (i.e., ‘tirage’) and each
relates to a different aging regime.
The first tirage is usually aged
entirely in tank. The second tirage
is released a year or two later,
after ageing in barrel. Also note
that the term ‘ouillé’ refers
to the technique of topping up
barrels as the wine evaporates to
ensure that minimal oxygen gets in
contact with the wine, and thereby
minimising the oxidative expression
typically associated with a Savagnin
from Jura. |

100% Savagnin which is a white grape that is
native to the Jura region. It is named after
the lieu-dit or plot of land where
the Savagnin is grown. As with many wines
from the Jura this wine has been made with a
slight oxidative edge which gives it a
beautiful, nutty, savoury, umami quality
that makes for compelling drinking. You will
get notes of grapefruit. almonds and
hazelnuts and even salt before you notice
the long, long finish. This is an incredibly
exciting wine that is unlike any produced in
this country. You have to try it to see what

light, delicate almost translucent red wine
that gives off aromas of red currants,
citrus and saddle leather with a touch of
cinnamon. It is not high in alcohol (at a
pleasant 12%) and it does not have
aggressive tannins. There is instead a
purity and silkiness to this wine that makes
it quite ethereal. It matches with just

“It is always exciting to receive a Pinot
Noir from the Jura, and even more exciting
when it is supplied by Tony Bornard. It is
useful to remember that Tony’s vineyards are
only an hour’s drive from the centre of
Burgundy, so it is not surprising that Pinot
is grown here. It was brought up the road
from Burgundy hundreds of years ago and has
developed its own character with the
different climate and the different soils
and the different yeasts that are found in
this region. This is a very supple wine with
good fruit and some length. It is a perfect

Burgundian-style Pinot Noir wines might find
this one a bit different! There is an
earthiness to this funky, ‘alive’ wine that
we find quite appealing. There are notes of
mushroom (in a nice way) and cherry and a
mineral finish that is quite long. As with
many of Philippe’s wines, this one has that
lovely savoury, umami quality that makes you
want to take another sip. It is interesting
to note that more and more lovers of Pinot
Noir are starting to compare their favourite
red wines from Burgundy with those from
their eastern neighbours in Alsace and the
Jura. There are some very special wines that
rival their better known cousins and this is
