We have been proud ambassadors of Saké
Tatsuriki in Singapore for the past few years,
and truly believe it has earned its place in the top
echelons of saké breweries in Japan.
|
Over the years, we developed a close relationship with the
owner, Takeyoshi Honda (pictured below). We
met with him several times in Japan when we visited the
brewery and rice fields and attended numerous dinner events
with this charismatic legend. He also hosted some memorable
events in Singapore, showcasing his delectable sakés in some
of the best Japanese restaurants in town. It was with great
sadness that we received the news that he passed away last
year at the age of 85. While we were devastated at the news,
we were grateful to have known him and to know that the
Tatsuriki brewery will continue to carry on in the very able
hands of his nephew, Shinichiro Honda.

Organic cultivation was the key to success for Honda-San,
and his ability to procure rice from the best fields in
Hyogo continues to allow his brewery to produce some of the
most highly lauded saké in Japan.
A trip many years ago to Burgundy left Honda-San inspired to
do the impossible. He confided in me with a deadpan look:
“After that trip, I realised what I wanted to do back home
in Japan. I wanted to make the Romanée-Conti of saké.”
He was determined to source from only the finest rice fields
in Japan, deciding that for his saké the rice had to be from
Hyogo prefecture, and it had to be Yamada Nishiki rice only.
The Yamada Nishiki grown in these paddies is taken in as
unpolished rice, and with special attention to each detail
and over a long period, the rice is polished down to 35% of
its original weight. What’s left is so beautiful it’s
moving, almost like pearls.
Honda-San was obsessed with finding the best paddy fields
and maximising the potential each field holds. He had been
known to mix crushed bonito heads into the soil for added
nutrients.

We were privileged to work with this legendary saké figure
over the last few years. His gentle, dogged determination
and good cheer will be missed. But his legacy will live on
as we continue the relationship with the next generation,
who will never let the legend’s perfectionist spirit be
compromised.
Today’s offer includes the latest Tatsuriki saké bottling
from special rice field designations, Kamitojo and Kinkai,
in Hyogo.
I had to the opportunity to visit these rice fields two
years ago, when Honda-san personally took me on a tour of
the fields. He was convinced that the best quality Yamada
Nishiki rice is planted in these two areas and was
determined to brew top-notch saké from here.
Fast forward two years later and the Tatsuriki Junmai
Daiginjo Kinkai and Kamitojo are now in our
hands, exported for the first time outside of Japan.
We are also offering Tatsuriki’s top daiginjos, Yabu no
Sasayaki and the Tatsuriki Dragon, the latter
of which was conceived by Honda-San’s grandson, the 5th
generation in line since Honda Shoten first opened its doors
in the early 19th century.

Ginjo is brewed from the new rice variety Hyogo
Nishiki. It features an elegant profile with
sweetness and umami from the rice. Hyogo Nishiki is
envisaged as the next-generation sake rice, born

expresses the full advantage of the rice of
Hyogo-kishu with an impression of an outstanding

Hyogo there are regions, villages and even plots of
land that yield superior Yamada Nishiki rice, and
many consider Yokawa and Tojo to be the two best
villages for Yamada Nishiki. Kamitojo is the name of
the place where the rice for this saké was sourced,
and is part of the Tojo area, with its mineral-rich
soils and optimal climatic conditions for superior
saké rice. In this expressive junmai daiginjo,
Honda-San brings out the terroir of these special
rice fields. Exhibiting ripe pear notes with creamy
rice scents in the background, this bottling has an
off-dry, clean, pure personality.

Kinkai is a
rural area in Hyogo where rice fields can be found
that have been harvested for centuries. Found here
is the village of Yokawa, one of the two locales
considered to yield the most superior Yamada Nishiki
rice. Yokawa in particular is high in elevation, and
the growers there use rice fields cut into the
mountainside like a set of descending shelves, which
lets the water flow down through the fields
smoothly. At this high altitude, cool night-time
temperatures combined with generous afternoon
sunshine result in the ideal climate for growing
Yamada Nishiki rice. The Kinkai is the
highest-quality bottling, perhaps with the exception
of Akitsu. It’s a full-bodied beauty, with
amazing glycerin, and an off-dry, smooth and pure
presence on the palate.
